We are making a delicious dish with our friend Katy Elliot who will also inform fellow chefs about Arkansas Local Food Network (ALFN) and how to order fresh produce and protein direct from AR farmers and small businesses using the ALFN website (Arkansas Local Food Network).
Shakshuka
Ingredients:
- 1.5-2 pounds fresh tomatoes, or canned whole, peeled tomatoes
- One bell pepper
- One onion
- Three cloves of garlic
- 4-6 eggs
- ¼ cup of cilantro or parsley
- 3 tablespoons olive oil
- 1 tablespoon smoked paprika
- 2 teaspoons cumin seeds, or 1 teaspoon powdered cumin
Additional notes:
This is a versatile dish! You can add any vegetable or additional protein and it will be delicious.
Eat with bread of any kind for sopping up the stew!
For a hardier meal, serve with rice.
Instructions:
- Prep all of your fresh ingredients: dice the onion and peppers, mince the garlic, and chop the tomato.
- On medium heat, add in the olive oil and then saute the onion and peppers together until the onions are translucent, about 5 minutes.
- Add the garlic, cumin, and paprika and then cook until fragrant, about 30 seconds.
- Add the tomatoes and simmer for about 7 minutes, adding water if needed to loosen the sauce.
- Finally, make small wells across the pan and crack the eggs into the sauce. Cover the pan and cook until the eggs are set, about 5-7 minutes.
- Add fresh herbs and enjoy!

Nixon Library
Open since 2009, the Esther DeWitt Nixon Library is a 13,700 square-foot building located on historical Main Street in Jacksonville. Our resources include adult and juvenile fiction and nonfiction materials in print and on DVD, as well as the vast digital collection common to all CALS libraries and available to download or stream 24/7. Innovative new collections have added birdwatching kits, engravers, fishing poles, telescopes, and toy library. Library users may enjoy free use of public computers, wireless internet access, and three study rooms equipped with dry erase boards. A larger meeting room features a catering kitchen, projector and screen, AV system, wireless access, laptop connection and a dry erase board. An outdoor pavilion with seating can accommodate talks, concerts, or other gatherings. The Nixon Library hosts educational and recreational programs for library users of all ages. In addition, the Nixon Library is home to Jacksonville’s Centennial Time Capsule and is a geocache location.
