We are making a delicious dish with our friend Katy Elliot who will also inform fellow chefs about Arkansas Local Food Network (ALFN) and how to order fresh produce and protein direct from AR farmers and small businesses using the ALFN website (Arkansas Local Food Network).
Shakshuka
Ingredients:
1.5-2 pounds fresh tomatoes, or canned whole, peeled tomatoes
One bell pepper
One onion
Three cloves of garlic
4-6 eggs
¼ cup of cilantro or parsley
3 tablespoons olive oil
1 tablespoon smoked paprika
2 teaspoons cumin seeds, or 1 teaspoon powdered cumin
Additional notes:
This is a versatile dish! You can add any vegetable or additional protein and it will be delicious.
Eat with bread of any kind for sopping up the stew!
For a hardier meal, serve with rice.
Instructions:
1. Prep all of your fresh ingredients: dice the onion and peppers, mince the garlic, and chop the tomato.
2. On medium heat, add in the olive oil and then saute the onion and peppers together until the onions are translucent, about 5 minutes.
3. Add the garlic, cumin, and paprika and then cook until fragrant, about 30 seconds.
4. Add the tomatoes and simmer for about 7 minutes, adding water if needed to loosen the sauce.
5. Finally, make small wells across the pan and crack the eggs into the sauce. Cover the pan and cook until the eggs are set, about 5-7 minutes.
6. Add fresh herbs and enjoy!

Children's Library
The Hillary Rodham Clinton Children’s Library & Learning Center includes a computer lab with fourteen computers, teaching kitchen, large activity area, individual and group study rooms, theater, and community room in addition to a collection of more than 21,000 books, DVDs, and CDs.
In the 165-seat theater, children can experience all aspects of theater, including designing and building sets, writing plays, acting, and costume design. The state-of-the-art sound system, lighting, and projection screens is also be used for movies, concerts, and lectures.
The Children’s Library’s grounds are integral to the entire facility’s program. A greenhouse and teaching garden helps children learn about growing healthy foods as well as provide produce that are used in the teaching kitchen programs. The grounds reflect the topography of Arkansas’s ecosystems, from the native hardwood trees in the highlands to vegetation of the wetland areas, which are both planted and original to the site. Walking paths offer families an attractive place for exercise while learning the names of the trees and plants, and an amphitheater has seating for outdoor programs or nature watching.
